Chamomile + Rosehips Chardonnay

4 heaping Tbsp chamomile flowers

2 Tbsp rosehips

1 quart chardonnay, sherry, or other white wine

Combine all ingredients in a quart jar or bottle and seal. Shake daily, or whenever you remember. Strain after five days or wait longer for potentially stronger flavor. Cheesecloth or other fine cloth is recommended for straining. Enjoy!

 

Winter Spice Merlot or Brandy

1 medium cinnamon stick

12 whole allspice berries

4-6 whole cloves

zest of 1 orange

2 cups merlot, brandy, or whatever liquor or wine you have 

Combine ingredients in a jar or bottle and seal. Shake daily, or whenever you remember. Strain after 6-24 days; longer time should result in stronger flavor. 

 

Fig+Cardamom+Vanilla Vodka

6 dried or fresh figs

45 cardamom seeds

1/2 - 1 tsp vanilla extract, or 1 whole vanilla bean

1 pint vodka

Roughly chop figs. Combine all ingredients in a jar or bottle. Shake daily, or when you remember. Strain after 7 days, or longer for a possibly stronger flavor. Enjoy on the rocks or in cocktails.

 

Black Birch vodka  for a wintergreen flavor

2 Tbsp black birch twigs, cut into small pieces

1 pint vodka

Combine all ingredients in a jar or bottle. Shake daily, or whenever you remember. Strain after 5-10 days, depending on preferred strength of wintergreen flavor. Enjoy on the rocks or in cocktails.

 

Sassafras brandy  for a root beery flavor

2 Tbsp chopped sassafras root

1 pint brandy

Combine all ingredients in a jar or bottle. Shake daily, or whenever you remember. Strain after 5-10 days, depending on preferred strength of root beer flavor. Enjoy on the rocks or in cocktails.
